Hi friends! My name is Meaghan and I’m a twenty-something, post-grad living in rural Connecticut. I went to the University of Connecticut (*husky for life*) and was diagnosed with Celiac Disease in the middle of my junior year…a serious plot twist! I’ve always loved food. During and after every meal I’m thinking about what I’ll be eating next. I’ve never been picky and will eat (and like) almost everything!

However, beginning in my sophomore year in college, I started having nearly constant issues with my stomach.  I was in so much pain and discomfort on a daily basis that by the time my doctor did a blood test for Celiac,I was desperate.  I was willing to do anything just to get some relief.  When I got the phone call that I tested positive, I was just happy to finally have answers! Let me tell you though…it was overwhelming.  I wasn’t entirely sure what gluten was or where it was found.  I stumbled through the first year trying to figure what I could eat, what had hidden gluten, and how to still be social despite this new challenge. It’s not always easy and can be really emotionally challenging! (Have you ever cried over nachos that weren’t gluten free?…oh, yeah, no, me neither…:-\)

It’s been about 5 years since I’ve been diagnosed and the gluten-free lifestyle is pretty much second nature now!  As much as possible, I love to fuel my body with really beautifully healthy foods rather than just gluten free junk food.  I feel better and I truly enjoy knowing that I’m taking care of my body.  But as you’ll see…I know how to splurge 🙂 Life is short and I’ll eat smoothies and salads all day if it means I can have a burger and ice cream later! I also like to say that I’m low key gluten-free though because everything I make is simple and straightforward.  If a recipe lists more than one type of flour, I know immediately I’ll never make it! Ain’t nobody got time to add in arrowroot flour, sorghum flour, xanthum gum, etc etc.  I want to help you stream line this whole gluten-free thing so we can all enjoy some easy living and not let this disease define our whole lives!
