Stocking my freezer with meals for when Jack arrives!
I really can’t believe that I’m already 38 weeks pregnant. Don’t get me wrong, I feel like I’ve been pregnant FOREVER, but I just felt like I’d never get to the end lol But here we are, down to the final weeks! The timing of this pregnancy worked out really well with my work schedule because my company gives us 2 weeks off for Christmas and New Years. So I’ve been planning on using that time to stock our freezer with lots of frozen meals we can quickly make once Jack arrives in January!
There are plenty of days now where I don’t feel like going through the hassle of cooking dinner and my husband doesn’t feel like doing the dishes, so I know when sleep deprivation sets in we’re going to be SO thankful for every dinner that doesn’t have to be made from scratch. I spent some time on pinterest gathering recipes that I planned on making, so I figured I’d share what I ended up prepping!
I ended up making 9 different recipes:
- Chili Tortilla Bake by Taste of Home
This recipe is pretty much already gluten free! The only swap I had to make was using corn tortillas instead of wheat tortillas. I used 6 corn tortillas on each layer to cover the casserole.
2. Zippy Turkey and Rice by Taste of Home
This recipe is naturally gluten free, so no tweaks needed! Yay!
3. Shepard’s Pie by Wheel ‘n Deal Mama
This recipe is also naturally gluten free! Just make sure you use gluten free beef broth. Beef broth is sometimes harder to find gluten free than chicken broth!
4. Stuffed Bell Peppers by The Virtuous Wife
This recipe is naturally gluten free! I did end up using ground turkey instead of ground beef though.
5. Enchiladas
I loosely used this recipe for Freezer Beef Enchiladas but tweaked it a little. I ended up cooking some chicken in my slow cooker and shredding that to use instead of beef. I also used corn tortillas instead of flour tortillas to make it gluten free! And one more thing–make sure whatever enchilada sauce you end up buying is gluten free as well. I used the Frontera brand.
6. Chicken Fajita Kit by The Kitchn
I honestly didn’t even look at the recipe for this…I just used the picture as inspiration. I got a gallon bag and stuck in some Mission Gluten Free Tortillas and a bag of frozen peppers and onions. Then in another bag, I mixed 2 sliced chicken breasts and a packet of gluten free fajita seasoning which I then stuck into the main gallon bag.
7. Sausage Stuffed Mini Peppers by The Family Freezer
This recipe is AMAZING because it’s literally 4 ingredients and requires no cooking to prep! I ended up using sweet Italian sausage and I plan on just boiling some pasta to serve it with when we reheat it.
8. Beef Stew by Tales of a Messy Mom
Another recipe that’s naturally gluten free! Just make sure you use gluten free beef broth.
9. Lasagna by The Family Freezer
I tweaked this recipe a bit because my husband can’t deal with cooked spinach. He asks why I put “wet leaves” in it lol So I left out the spinach and added some ground turkey to the pasta sauce for my sauce layer. I also used the Banza no-cook lasagna noodles, so I’m excited to see how those turn out!
So that’s it! I made all of these meals over the course of 2 days and in total, it probably took about 4-5 hours. I also stocked the freezer with several loaves of bread and some lunch meat so we’ll have stuff to easily make sandwiches for lunch. It was pretty tiring to do all this cooking while being so pregnant but I know I’m going to be SO HAPPY I did this.
