My Gluten-Free Wedding

So since being diagnosed with Celiac, I thought about whether I wanted to have my wedding be gluten free.  I kind of toyed with idea, thinking that it would be a little over the top to go all gluten free…but then I changed my mind.  My husband and I eat gluten free at home all the time and a run-in with gluten at my wedding would completely ruin the whole thing. So why couldn’t I just do all gluten free!? Most people don’t even notice unless you tell them and the piece of mind I would have knowing I wasn’t going to be poisoned on my special day would be priceless!

As fate should have it, I found a pretty reasonable catering company that specialized in allergy-friendly foods! They are a nut-free facility and will happily accommodate other allergies as well.  This is where my dream wedding menu began….

My husband and I thought about what kind of food we wanted and I knew immediately.  What kind of food do I most like to eat? Comfort food.  Southern. Comfort. Food.  Yup…pulled pork, mac and cheese, watermelon, cornbread…the works.  I mean who doesn’t like that?! It was supposed to be our special day so we figured why go with a boring (and EXPENSIVE) traditional meal when we could stuff our faces with food that actually gets us excited? Great decision, I tell ya.

So our menu was pretty much exactly that! For appetizers we had french fries (seriously. they went so fast), bacon-wrapped chicken pops, and sundried tomato and goat cheese mouse tartlets (that was fancier than I wanted, but my mom liked it…).

We also had little mini BLT sandwiches but I didn’t manage to get a picture of those.  Freakin’ delicious though.

I barely got to eat any of them though because my photographer was a god damn drill sergeant.  Word to the wise, pick your photographer carefully!! We did get some nice photos out of the day, so that’s all that matters I guess haha

Anyways, for dinner! Ugh…dinner.  My biggest regret in life is that I can’t time travel and go back to eat this dinner over and over again.  We had….pulled pork, flank steak, mac and cheese, watermelon, salad, cornbread, roasted summer veggies….I think that’s all.  Holy cow was it good.  Everyone was raving about it and couldn’t believe it was gluten free! The only gluten item I had available was cornbread.  The caterers made me my own gluten free cornbread and put it in a basket for me on the couples’ table 🙂 The cornbread was put int between two raised serving dishes to prevent cross contamination…but it didn’t matter because I made sure to get food first haha I don’t play around when it comes to food and I was starving!!

As for the cake, we did a small gluten-free cake that Adam and I could cut and eat and then we got gluten-full cupcakes for everyone else.  It worked perfectly and saved us a ton of money! A full-sized gf cake would have been SO expensive.

We are counting down the days ’til our anniversary, just so we can eat that cake.  So good!!

Overall, I’m so happy I decided to go this route.  Everyone absolutely loved the food and it was so nice for me to 1) thoroughly enjoy the food we had and 2) not have to worry about this amazing night being ruined by gluten pain.  If you’re considering doing this, I highly recommend it! Especially if you can find the right caterer.
